So, now that life has returned to normal, we are back to healthy food with a vengeance. This is a really yummy salad that is easy to make and as salads go, it's actually quite filling. You can add croutons too if you like having bread with your meal.
- Chicken fillets (we find 1/2 a chicken breast each is plenty for us but just cook as much as you think will fill you up)
- Lettuce (I like baby spinach and rocket but you can use whatever you like)
- Cherry tomatoes
- Parmesan cheese
- Pine nuts
- Salt and Pepper
- Extra virgin olive oil
