Launch Party & Showcase Debrief

Well, what a fabulous night we had!  The Provenance Bar and Restaurant was the perfect venue for our Launch Party & Showcase, David (from Provenance) was fantastic to deal with and pretty much let us have the run of the place, and boy, did we take it over.  We had a table full of products dedicated to each continent so that people could "travel" through the room, visiting each country as they go.  We also had a big screen hooked up to some iMacs so that people could navigate their way around Robin Street Market if they so desired.
We all enjoyed lots of spectacular food and drink, including mushroom arancini, individual buffalo mozzarella pizza and a DELICIOUS tomato tea.  There were local beers and wines to enjoy and I finished off the evening with a glass of mulled wine - so nice on a cold winter evening.

Thanks again to everyone who made the effort to come down and celebrate with us, and thankyou to everyone who has supported Robin Street Market since we went live in December 2009.  It has been heaps of fun and also loads of hard work and it was so nice to stop, take a breath and celebrate what we have achieved.   We are looking forward to lots more fun celebrations in future (any excuse for a party!).

Delish Chicken Salad

Over the last few months David and I have been trying to eat really well - no fad diets, just trying to cut out white bread and too many carbs (especially at night) and increasing our fruit and veggie intake.  Well, it was all going brilliantly until the week before our Launch Party.  We were so busy with all the preparations that out went healthy food, and in came quick, fatty meals.  To give you an idea of what I am talking about (and I am embarrassed to admit this), the dinner menu last week included frozen pizza (actually, we found these Dr Oekter frozen pizzas at Coles which are very yummy and great for a very quick meal) and Red Rooster.

So, now that life has returned to normal, we are back to healthy food with a vengeance.  This is a really yummy salad that is easy to make and as salads go, it's actually quite filling.  You can add croutons too if you like having bread with your meal.

Ingredients
  • Chicken fillets (we find 1/2 a chicken breast each is plenty for us but just cook as much as you think will fill you up)
  • Lemon
  • Lettuce (I like baby spinach and rocket but you can use whatever you like)
  • Cherry tomatoes
  • Avocado
  • Parmesan cheese
  • Pine nuts
  • Salt and Pepper
  • Extra virgin olive oil
Cut up the chicken fillets into bite size pieces, drizzle with olive oil and lemon juice, season with salt and pepper and cook in the oven for approx 15-20 mins (until cooked through).  In the meantime, chop up the tomatoes and avocado and add to the washed lettuce.  Dress with olive oil, lemon juice, season with salt and pepper and add some freshly grated parmesan. Cook the pine nuts over a low flame on a dry pan for a couple of minutes (until they just start to brown) and add to the salad.  Give the salad a good mix, pop the chicken on top and there you have it!  Delish Chicken Salad. YUM!
