Ingredients (serves 4):
- 1/2 chinese cabbage shredded finely
- One large grated carrot
- 2 tablespoons roasted pinenuts and peanuts
- 1/2 punnet grape or cherry tomatoes
- 1 handful of freshly grated parmesan cheese
- 2 tablespoons mayonnaise
- 1 dollop of light sour cream
- 1 teaspoon of basil pesto
- 1/2 roast chicken (cut into smallish pieces)
- 1 mango (cut into small pieces)
- Dollop of guacamole (or fresh avocado) for the top
