Peanut Butter & Choc Chip Cookies

Shannon from Rabbit & The Duck not only provided us with some amazing handmade products to add to our Nest (you can check them out here) but she was also kind enough to share her recipe for peanut butter & choc chip cookies with us.  Here it is, enjoy!
1 cup crunchy peanut butter
1/2 cup brown sugar
1/2 cup dark chocolate bits
1 tsp bicarbonate soda
1 egg, lightly beaten
Plain flour (enough to make a nice dough, about 1/2 cup)

For a vegan alternative replace the egg with 1 teaspoon of egg replacer (made according to packet directions) and some apple sauce.

Preheat oven to 200 degrees celcius. Line 2 baking trays with non-stick baking paper. Combine all ingredients in a bowl and mix well.

Place teaspoonfuls of the mixture on the prepared tray and press lightly with a fork. Bake for 8-10 minutes or until light golden. Leave to cool on the trays then place into an airtight container.
