This muffin recipe is really easy and quick, and you can alter it to your taste. It is great to have for a healthy snack in your lunch or with a nice cup of tea.
3 cups of rolled oats
1 cup of apple sauce
2 teaspoons of vanilla essence
2 teaspoons of baking powder
2 teaspoons of cinnamon
1/2 -1 cup of fruit of your choice
Pre-heat the oven to 180 degrees. In a bowl, mix together the eggs, vanilla essence and apple sauce. In a big bowl, mix this in with the oats, cinnamon and baking powder.
Choose up to two different types of fruit to add to the mixture. For this batch, I cut up about 3/4 of a cup of dates. I have also tried apple and sultanas together which was delicious.
Stir in the fruit with the mixture. It should be quite a moist mixture. Grease a muffin tray and spoon the mixture evenly into the tray. It should make 12.
Bake the muffins in the oven for about 20 minutes, or until the tops turn golden brown. Allow them to cool a little before taking them out of the tray, but make sure you eat one when they're still warm - just to check they taste ok, of course!
